My mother’s classic Sunday dinner was meatloaf, baked potatoes, and green bean casserole. How to Make Green Bean Casserole

Step 1 — Blanch the green beans: Trim and cut the beans to your preferred length (about 3 inches is a comfortable size). Bring a large pot of salted water to a boil, add the beans, and cook for about 5 minutes until crisp-tender. Immediately transfer the beans to an ice water bath to stop the cooking and preserve bright color and firm texture. Keep them chilled while you prepare the sauce.

Step 2 — Make the mushroom sauce: Quarter the mushrooms. In a large skillet, melt a portion of the butter over medium heat and add the mushrooms. Cook without salt until they release moisture and brown, developing fond on the pan. Add the remaining butter and the salt, then stir in the flour to form a roux, cooking for about a minute. Add minced garlic, Dijon mustard, and Worcestershire sauce. Whisk together the milk and stock, then slowly add this liquid to the mushrooms while stirring. Step 3 — Combine and bake: Drain the blanched beans and return them to the pot or a mixing bowl. Pour the mushroom sauce over the beans and mix until evenly coated. Transfer the mixture to a greased 9 x 13-inch baking dish and smooth the top. Bake in a preheated 350°F oven for about 18–25 minutes, until the sauce is bubbling.

Step 4 — Make the crispy shallot topping: Thinly slice shallots into rounds. Heat a high-smoke-point oil (such as sunflower, avocado, peanut, or canola) to around 300°F in a deep saucepan. Fry the shallot rounds in batches until golden brown and crisp, 12–15 minutes per batch. Drain on paper towels and season lightly with kosher salt. Add the fried shallots to the casserole right before serving so they stay crisp.

  • 2 lbs green beans, cleaned, trimmed, and cut in half (or thirds)
  • 4 tbsp unsalted butter, divided
  • 1 lb mushrooms, cleaned and quartered
  • ¾ tsp kosher salt
  • 3 tbsp all-purpose flour
  • 2 cloves garlic, minced
  • 2 tsp Dijon mustard
  • 1 tbsp Worcestershire sauce
  • 1 cup whole milk
  • ¾ cup chicken stock
  • ⅓ cup sour cream
  • ½ tsp freshly ground black pepper
  • 2 tsp fresh lemon juice
  • 1 lb shallots, sliced thin

Instructions

  1. Preheat the oven to 350°F. Grease a 9 x 13-inch baking dish. Prepare a large bowl of ice water. Whisk together the milk and chicken stock and set aside.

  4. Add the garlic, Dijon, and Worcestershire, then slowly whisk in the milk-stock mixture. Simmer until the sauce thickens. Remove from heat and stir in sour cream, black pepper, and lemon juice.
  5. Drain and dry the green beans, then toss them with the mushroom sauce. Transfer to the prepared baking dish and smooth the top. Bake 18–25 minutes until bubbling.
  6. While the casserole bakes, heat about 1 quart of high-heat oil to 300°F. Fry the shallots in batches until golden and crisp, 12–15 minutes per batch. Drain on paper towels and season with kosher salt.
