Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Spread the frozen tater tots in a single layer on a large baking sheet or in a baking dish. If using a cast iron skillet, arrange the tots so they have a little room to crisp.
  3. Sprinkle the tots with cumin, chili powder, salt, and pepper. Toss lightly to coat the tots evenly.
  4. Bake the seasoned tots for 20 minutes, or until they begin to brown and crisp on the outside.
  5. Remove the baking sheet and evenly sprinkle the shredded cheese over the tots. Scatter the black beans and corn across the cheese.
  6. Return to the oven and bake for another 8–10 minutes, or until the cheese is melted and bubbling and the beans and corn are warmed through.
  7. Top with desired garnishes—pico de gallo, diced red onion, sour cream, cotija, cilantro, and sliced jalapeño—and serve immediately.

Tips

  • Keep toppings balanced. To maintain a slightly crisp texture, avoid piling on too many wet or heavy toppings before the final bake. Add salsas and crema after baking if they are particularly watery.
  • Use a large baking surface. Spreading the tots out helps them crisp more evenly. A cast iron skillet adds extra browning, but a rimmed baking sheet works well too.
  • No thawing required. Bake the tots straight from the freezer for the best exterior crisp and tender interior.
  • Choose melting-friendly cheese. Pepper jack, cheddar, Monterey Jack, or mozzarella all melt nicely. For the best melt and texture, shred a block of cheese yourself rather than using pre-shredded cheese, which often contains anti-caking agents that can reduce meltiness.
  • Make it heartier. Turn totchos into a full meal by adding cooked shredded chicken, seasoned ground beef, or crumbled chorizo before baking.
