I was thrilled to try one of her lemon bar recipes and I ended up giving it a small twist to make it feel a little more autumn- and winter-friendly: a caramelized brulee topping. The bars still have the intensely bright lemon flavor I crave, but the crisp, caramelized sugar on top adds that cozy, indulgent finish.

Ingredients
- For the crust:
- 1 cup (2 sticks) unsalted butter, room temperature
- ½ cup granulated sugar
- 2 cups all-purpose flour
- ¼ teaspoon salt
- For the filling:
- 1 ¾ cups granulated sugar
- Juice and zest of 3 lemons
- ¾ cup all-purpose flour
- 4 large eggs, room temperature
- For the brulee:
- ⅓ cup granulated sugar (for topping)
Instructions
- Preheat the oven to 350°F (175°C). Line an 11 x 7 inch baking pan with parchment paper, leaving an overhang for easy removal.
- Make the crust: In a stand mixer or with a hand mixer, cream together the butter and ½ cup sugar until light and fluffy. Add the 2 cups flour and ¼ teaspoon salt and mix until just combined into a dough.
- Press the dough evenly into the prepared pan to form a uniform base. Use the bottom of a measuring cup to help smooth and compact the crust.
- Bake the crust for 20 minutes, until lightly golden and set.
- While the crust bakes, prepare the filling: Whisk together 1 ¾ cups sugar, the lemon zest and juice, ¾ cup flour, and the 4 eggs until fully combined and smooth.
- When the crust is done, carefully pour the filling over the hot crust and return the pan to the oven. Bake for 30–35 minutes, or until the top is set and only slightly jiggly in the center; it may puff slightly and then deflate as it cools.
- Remove from the oven and cool completely to room temperature. For best slicing results, chill the bars briefly to finish setting before cutting.
- Just before serving, sprinkle a generous layer of the ⅓ cup granulated sugar over the top of the bars. Use a kitchen torch to caramelize the sugar into a crisp brulee; alternatively, place the bars under a very hot broiler for a short time, watching closely to avoid burning.
- Serve immediately after bruleeing. If you prefer to prepare ahead, store plain lemon bars (without the brulee) in an airtight container in the refrigerator for up to one week. Brulee the sugar topping only when you’re ready to serve, as the caramelized layer will soften if refrigerated or left uncovered for long periods.
Notes & Tips
– For the brightest lemon flavor, use both fresh lemon zest and freshly squeezed lemon juice.
– Room-temperature eggs help the filling mix smoothly and bake evenly.
– If you don’t have a kitchen torch, use the broiler method but keep the pan close and monitor carefully; the sugar can go from caramelized to burnt very quickly.
– These bars travel well, but wait to brulee until you’re ready to serve to preserve a crisp top. They make a generous batch—consider doubling if you’re feeding a crowd and want leftovers.
