  • 24 ounces Polish kielbasa, portioned into 6 pieces
  • 3 cups bell peppers (any color), sliced into 1/4″ strips
  • 1 cup red onion, sliced into 1/4″ strips
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt

Sweet and Spicy Sauce

  • 2 tablespoons tomato paste
  • 2 tablespoons brown sugar
  • 2 teaspoons red wine vinegar
  • 2 teaspoons sriracha
  • 1 clove garlic, finely minced
  • 1/2 teaspoon garlic powder

Instructions

  1. Set up a barbecue grill on medium-high heat for indirect cooking: heat located on one side while leaving the other side cooler.
  2. Cut the kielbasa into 6 portions and place on the indirect side of the grill. Cook until golden and the skin begins to split, about 20 minutes.
  3. Preheat a 10″ cast-iron skillet (or another heat-safe pan) directly over the heat source and add the olive oil.
  4. Add the onions, peppers, and salt. Sauté 1–2 minutes over direct heat, then move the skillet to the indirect side of the grill.
  5. After 5–10 minutes, when the onions and peppers are tender-crisp, whisk together the sauce ingredients and stir into the vegetables.
  6. Continue to cook until the sauce becomes fragrant and starts to caramelize and the vegetables reach your preferred tenderness.
  7. Toast hoagie or brat buns over the flame if desired. Serve each sausage in a bun topped with the caramelized peppers and onions, or plate without bread.

Notes
