  • Canned chickpeas – rinsed and drained; a quick, reliable base.
  • Pumpkin puree – plain pumpkin puree only (not pumpkin pie filling).

The roasted garlic is essential

Do not substitute raw minced garlic. Raw garlic will overpower the delicate balance of pumpkin and rosemary. Roasted garlic is soft and sweet, blending into the hummus and enhancing the overall flavor.

If you don’t have a head of roasted garlic ready, you can quickly create the same flavor on the stove: simmer peeled, slightly crushed garlic cloves in a small saucepan with olive oil over low heat for 10–15 minutes. Keep the heat low so the cloves become soft and golden without browning too much. Save the infused oil for drizzling or for frying herbs like sage—it makes a delicious dipping oil.

How to make the hummus

The method is quick and forgiving. A food processor or blender works best to achieve a smooth, creamy texture.

  • Place the roasted garlic, extra-virgin olive oil, water, rinsed chickpeas, pumpkin puree, maple syrup (or honey), and salt into a blender or food processor. Process until smooth, pausing to scrape down the sides as needed.
  • If the hummus feels too thick, add a little more olive oil or water a tablespoon at a time until you reach the desired creaminess.
  • Stir in the minced fresh rosemary, then taste and adjust salt or sweetness to preference.
  • Transfer to a serving bowl and finish with a drizzle of olive oil and a sprinkle of roasted pumpkin seeds or extra rosemary sprigs.
