Grilled Whole Snapper Recipe with Lemon Herb Cream Sauce

This grilled whole snapper is a surprisingly simple weeknight meal that feels special without demanding a lot of time or fuss. I called my fishmonger ahead so the fish arrived gutted and scaled, which made the evening effortless: a quick oiling, a little seasoning, lemon and herbs stuffed in the cavity, then a brief sear and finish over indirect heat. While the fish cooks, a quick light lemon-herb cream sauce comes together in minutes to brighten the dish. The result is a tender, flavorful whole fish that serves a small family or dinner guests without a lot of cleanup.

Grilled Whole Snapper with Light Lemon-Herb Cream Sauce

  • 2 whole yellow-tail or red snapper, about 1–1.5 pounds each (1 fish serves 2 people)
  • extra virgin olive oil
  • kosher salt
  • freshly cracked black pepper
  • 2 lemons, sliced into thin rounds
  • handful fresh herbs (for example: oregano, parsley, thyme)
  • Light Lemon-Herb Cream Sauce (recipe below)

Ask your fishmonger to gut, scale, and clean the fish for you to save prep time and ensure they’re ready to cook.

Preparation and grilling:

  • Heat the grill to high while you prep the fish.
  • Trim the fins with kitchen scissors. Using a very sharp knife, make three shallow slits through the skin on each side of the fish; this helps seasoning penetrate and promotes even cooking.
  • Rub the entire exterior of each fish with olive oil, then season inside and out with kosher salt and freshly cracked pepper.
  • Place lemon slices and a handful of herbs into the fish cavity to add fragrance and flavor during grilling.
  • Oil the grill grate before cooking to prevent sticking. A safe, effective method is to hold a balled-up paper towel dipped in olive oil with kitchen tongs and rub the grate; this step helps the skin stay intact when you flip or move the fish.
  • Sear the first side for about 2 minutes, then turn and sear the other side for 2 minutes. After searing, move the fish to indirect heat and finish cooking for 10–15 minutes, or until the flesh is just cooked through and flakes easily.

Make the Light Lemon-Herb Cream Sauce while the fish cooks so it’s ready to spoon over the fillets at serving time.

To serve, gently fillet the fish: with a sharp knife cut along the backbone and up the center, then use a wide spatula to lift the fillet away from the bones. Place the fillet on the plate skin side down, and quickly check for any remaining bones with your fingers, removing any you find. Spoon a small amount of the lemon-herb cream sauce over the fish and serve immediately. This preparation serves four.

Light Lemon-Herb Cream Sauce:

  • 1 tablespoon unsalted butter
  • 1 tablespoon all-purpose flour
  • ½ teaspoon kosher salt
  • pinch freshly cracked black pepper
  • ½ cup milk (skim or 1%)
  • ½ teaspoon fresh lemon juice
  • ¼ teaspoon fresh lemon zest
  • 1 teaspoon mixed fresh herbs, finely chopped (such as parsley, thyme, oregano)

In a small saucepan, melt the butter over medium heat. Stir in the flour and cook, whisking, until the mixture is smooth and bubbly. Gradually add the milk while whisking constantly and continue cooking until the sauce thickens; this should happen within a minute or two. Keep the sauce below a boil and stir continuously, especially when using lower-fat milk, to prevent curdling. Season with salt and pepper, then remove from heat and stir in the lemon juice, lemon zest, and chopped herbs. Spoon the sauce over the grilled fillets just before serving.

Notes on timing: increase cooking time for larger fish. For a 5-pound fish, plan on around 15 minutes on indirect heat after searing; very large fish may require up to 30 minutes. Always check for doneness by testing whether the flesh flakes easily and is opaque.
