It’s finished with a silky white chocolate mousse, fresh raspberries, and delicate white chocolate curls — a stunning, crowd-pleasing dessert.

White Chocolate Raspberry Poke Cake
This cake is a celebration of contrasting flavors and textures: the soft, lightly flavored white cake, pockets of rich white chocolate, and bright, slightly tart raspberry sauce. The poke-cake technique makes every slice a surprise — each bite offers cake, fruit, and cream.

What is a Poke Cake?
Poke cakes are simple sheet cakes in which holes are poked across the top so a filling can be added. Fillings can be spooned or piped into the holes and may include sweetened condensed milk, ganache, fruit sauces, or pudding. The liquid sinks into the cake, creating moist, flavorful pockets throughout each slice. This method transforms an ordinary frosted cake into something more dynamic and flavorful.

How to Make This Cake
The cake starts with a white cake base that keeps its pale color by using egg whites and light-colored butter. To keep the crumb soft, a touch of sour cream is added, and a small amount of vegetable oil helps preserve moisture that egg whites can sometimes reduce. You can use milk or buttermilk; both work well, though buttermilk gives a slightly richer texture.
Flavor is classic: vanilla with a hint of almond extract for depth. If you prefer an ultra-white crumb, choose a clear vanilla extract and butter with a pale color.

Poke Cake Fillings
For this recipe you’ll prepare a homemade raspberry sauce and a glossy white chocolate ganache. After the cake has cooled, poke evenly spaced rows of holes across the top. Alternate spooning ganache into one row and raspberry sauce into the next, creating a striped pattern of flavor that reaches into every slice.

White Chocolate Mousse Topping
To keep the finish light and balanced, this cake is topped with a white chocolate mousse rather than a heavy frosting. Make a small white chocolate ganache, let it cool, then fold it gently into whipped cream until smooth and airy. Spread the mousse over the filled cake for a silky, cloudlike layer.

Finish with a light drizzle of extra white chocolate ganache and raspberry sauce, using a toothpick to create gentle swirls if you like. Create white chocolate curls by shaving a room-temperature white chocolate bar with a vegetable peeler, and scatter fresh raspberries over the top for color and brightness.

Ingredients
- 1 recipe homemade raspberry sauce (cooled)
- White Cake: 2 3/4 cups all-purpose flour; 1 tbsp baking powder; 1 tsp salt; 1 cup unsalted butter, softened; 2 cups granulated sugar; 1/2 cup sour cream, room temperature; 6 large egg whites, room temperature; 1 1/4 cups milk or buttermilk, room temperature; 1/2 cup vegetable oil; 2 tsp pure vanilla extract; 1 tsp pure almond extract.
- Super White Chocolate Ganache: 1/3 cup heavy cream; 1 cup white chocolate chips; optional white gel coloring for extra whiteness.
- White Chocolate Mousse: 3 oz finely chopped high-quality white chocolate; 1 3/4 cups heavy whipping cream, chilled and divided; 4 tbsp powdered sugar; 1 1/2 tsp pure vanilla extract.
- Topping: extra raspberry sauce, extra white chocolate ganache, white chocolate shavings or curls, fresh raspberries.
Instructions
- Prepare the raspberry sauce in advance and cool completely.
- Preheat oven to 350°F (177°C). Grease a 9×13″ pan and set aside.
- Whisk together flour, baking powder, and salt. Set aside.
- Cream butter in a stand mixer or with a hand mixer, then gradually add sugar and beat until light and fluffy (4–5 minutes). Mix in sour cream.
- Reduce speed and add egg whites one at a time until incorporated. Combine milk (or buttermilk) with oil and extracts.
- Alternate adding the dry ingredients and the liquid mixture to the batter in thirds, mixing just until combined after each addition. Scrape the bowl as needed.
- Pour batter into the prepared pan and spread evenly. Bake 30–35 minutes or until a toothpick comes out clean. Cool completely on a wire rack.
- For the ganache: heat white chocolate chips with 1/3 cup heavy cream until melted and smooth. Cool slightly. (Add coloring if desired.)
- For the mousse: melt the chopped white chocolate with 1/4 cup cream and cool completely. Whip the remaining cream to soft peaks, add powdered sugar and vanilla, and whip to stiff peaks. Fold in the cooled white chocolate until smooth.
- Use a straw or thin rod to poke rows of holes across the cooled cake. Alternate spooning raspberry sauce and white chocolate ganache into the rows.
- Spread the white chocolate mousse evenly over the top. Drizzle remaining ganache and raspberry sauce, swirling with a toothpick if desired. Top with fresh raspberries and white chocolate curls. Chill overnight for best texture, or serve chilled or at room temperature.
