How to Make Green Bean Casserole

Immediately transfer the beans to an ice water bath to stop the cooking and preserve bright color and firm texture. Keep them chilled while you prepare the sauce.


Step 2 — Make the mushroom sauce: Quarter the mushrooms. In a large skillet, melt a portion of the butter over medium heat and add the mushrooms. Cook without salt until they release moisture and brown, developing fond on the pan. Add the remaining butter and the salt, then stir in the flour to form a roux, cooking for about a minute. Add minced garlic, Dijon mustard, and Worcestershire sauce. Whisk together the milk and stock, then slowly add this liquid to the mushrooms while stirring.
