Still, there’s a certain charm to showing the behind-the-scenes clutter: it tells a more honest story of how recipes and images come to life.
If you’re curious to make these yourself, the concept is forgiving and adaptable. Look for ripe figs with a deep color and fragrant scent; they should be slightly soft to the touch. Choose sweet, juicy clementines to add bright citrus notes and a refreshing contrast to the figs and fortified wine. For the port, options like tawny or ruby will influence the final flavor: ruby lends fruity intensity while tawny brings a nuttier, caramel-like warmth. If you prefer to avoid alcohol, a rich grape juice or diluted cranberry juice can yield a similar sweetness and color while keeping the treat alcohol-free.
Freezing tips: pour the mixture into molds leaving a little room for expansion, and chill until fully set. Demolding can be easiest if you briefly run the outside of the molds under warm water to loosen the edges. For a smoother texture, consider blending the fruit thoroughly before combining with the liquid base; for a chunkier, more rustic popsicle, fold in small pieces of fruit after blending. Store leftovers in the freezer in an airtight container or wrapped individually to prevent freezer burn.
