Substitutions and Variations

  • Pan size: This recipe uses three 7-inch pans. You can also bake in two 8-inch or 9-inch pans — reduce or increase bake time slightly and check for doneness.
  • Colored frosting: Tint buttercream with gel food coloring for a vibrant finish without thinning the icing.
  • Cupcakes: Use the same batter to make cupcakes; fill liners two-thirds full and shorten baking time until a toothpick comes out clean.
  • Chocolate option: If you prefer chocolate, use this assembly method with a white or yellow crumb base for visible sprinkles, or add sprinkles on top of a chocolate frosting.

🔪 Instructions:

Prep: Preheat oven to 325°F (163°C). Grease three 7-inch round cake pans and line the bottoms with parchment paper. Allow all refrigerated ingredients to come to room temperature.

Eggs added to sugar in a mixing bowl with a mixer with text overlay.

Step 1: In a stand mixer fitted with the paddle attachment, beat the butter and sugar together until light and creamy. Add the eggs one at a time, beating after each addition and scraping the bowl as needed.

Vanilla added to egg mixture in a mixing bowl mixed with a mixer.

Step 2: Mix in the vanilla and almond extracts and the vegetable oil on low speed until combined.

Pro Tip: Using room temperature eggs helps trap air more effectively during mixing, which leads to a lighter, fluffier cake.

Step 3: Whisk together the flour, baking powder, and salt in a separate bowl.

Flour mixture added to wet mixture in a mixing bowl with a mixer inserted.

Step 4: Add half the dry ingredients to the wet mixture and beat briefly. Pour in half the milk, then add the remaining dry ingredients, followed by the rest of the milk. Mix until just combined to avoid overworking the batter.

Pro Tip: Choose rainbow Jimmies for batter mixing — they maintain color and texture without bleeding into the batter.

  • Freeze layers for easier frosting: Chilling or briefly freezing the layers firms them up and makes assembly cleaner.
  • Frosting quantity: This recipe yields extra frosting for thick filling and decorations; halve the frosting recipe if you prefer less.
  • Whiter frosting: Use clear vanilla extract for a paler buttercream.
  • Leveling: Trim dome tops with a serrated knife for even stacking.
  • Crumb coat: Apply a thin crumb coat and chill 10–15 minutes before the final layer to prevent crumbs from showing.
  • Room temperature ingredients: Bring butter, eggs, and milk to room temperature for the best texture and even mixing.

Notes

Storage: Keep leftover slices covered or in a sealed container in the fridge for up to 5 days. For best texture, let chilled slices sit at room temperature 15–20 minutes before serving.

Assembly tip: If layers are slightly uneven, level the tops before stacking for professional-looking results. A brief chill between crumb coat and final coat makes decorating easier.
