This recipe grew out of a larger slow-roasted marinara I make regularly. While making a big batch of that marinara one day, I roasted everything together and chose not to blend it. The result — scooped straight from the pan over noodles — was so good that I developed this smaller, streamlined version so we could enjoy it more often without producing gallons of sauce.
If you already make a slow-roasted marinara, you can roast the same ingredients and skip the blender; you’ll end up with a lot of chunky sauce, which is never a bad thing. For convenience, this recipe reduces the quantities for an easier weeknight preparation. In past batches we canned half blended and half left chunky so we could enjoy the flavor year-round; if you can and want to preserve some for later, that’s an option to consider.

When the sauce comes out of the oven it will have reduced and intensified in flavor. The onions and garlic will be soft and caramelized, and the tomatoes will have deepened in sweetness and umami. Add cooked noodles and a little of the pasta cooking water if you want to loosen the sauce and help it cling to the pasta.

Finish with plenty of grated Parmesan and torn basil leaves. Simple, honest ingredients with minimal hands-on time produce a sauce that feels special. This is a particularly good recipe for showcasing a variety of tomatoes — the mix of varieties contributes complexity, color, and depth.

Ingredients
- 3–4 pounds tomatoes, cut into large chunks (see notes)
- 1 small white onion, chunked
- 5 cloves garlic, peeled and cut in half
- 1/4 cup dry red wine
- 3 tablespoons olive oil
- 2 tablespoons fresh oregano, roughly chopped
- 2 tablespoons fresh sweet basil leaves, roughly chopped
- 2 tablespoons fresh Italian basil leaves, roughly chopped
- 1/2 tablespoon kosher salt
- 1/2 tablespoon dried oregano leaves
Instructions
- Prep: Preheat the oven to 425°F (220°C).
- Combine: In a large Dutch oven or ovenproof pot, add the tomatoes, chopped onion, halved garlic cloves, red wine, olive oil, fresh oregano, both types of basil, kosher salt, and dried oregano. Stir well to coat everything evenly.
- Bake: Roast uncovered in the oven for approximately 1.5–2 hours, or until the mixture has reduced by about half and the flavors are concentrated. Check every 30 minutes and stir to prevent charring; you want concentrated, softened tomatoes rather than blackened ones.
- Serve: Cook your pasta according to package directions. Toss the hot, drained noodles with the chunky sauce in a warm bowl or pan; add a splash of pasta cooking water if needed to help the sauce cling to the pasta. Serve immediately with freshly grated Parmesan and extra basil.
Notes
- Tomatoes: Use a mix of varieties for the best flavor and color — Romas, cherry tomatoes, heirlooms, yellow tomatoes, and on-the-vine tomatoes all work well. Aim for 3 pounds total. The variety brings a richer, more complex sauce.
- Basil: If you can’t find both sweet and Italian basil, use whatever fresh basil you can get to total about 4 tablespoons chopped. Fresh basil added at the end brightens the sauce.
- Storage and Canning: This sauce keeps well in the refrigerator for several days and freezes nicely. If you make a large batch, you can preserve some by canning or freezing portions for later use.
- Serving suggestions: Linguine or traditional spaghetti are excellent choices; finish with a drizzle of good olive oil and a generous sprinkling of Parmesan.
