Ingredients

  • 2 cups shiitake mushrooms, stems removed and caps halved
  • 1 pound frozen green beans (or fresh green beans)
  • 2 tablespoons olive oil, divided
  • 3 garlic cloves, minced
  • 1 inch piece fresh ginger, minced
  • 1 shallot, finely sliced or minced
  • 1 Thai chile, thinly sliced (seeds removed for less heat)
  • 2 scallions, thinly sliced
  • 1/2 cup soy sauce
  • Juice of one lime
  • 2 tablespoons honey (or agave/molasses for vegan)
  • 1 tablespoon toasted sesame oil
  • 1/2 cup water
  • White sesame seeds, to garnish

Instructions

  1. Heat a large skillet over high heat and add 1 tablespoon olive oil. Add the shiitake mushrooms and sauté 5–7 minutes until they are golden and slightly caramelized.
  2. Reduce heat to medium, add the remaining tablespoon of olive oil, then add the shallot, garlic, ginger, and Thai chile. Cover and let the aromatics sweat for about 5 minutes to develop their flavors without browning.
  3. Add the green beans, soy sauce, lime juice, water, and honey. Toss to coat everything evenly. Cover the pan and let steam for about 5 minutes, until the green beans are tender-crisp.

  5. Stir in the scallions and toasted sesame oil.
