The Best Whiskey to Make a Classic Irish Coffee With
Because it’s an Irish classic, an Irish whiskey is ideal. Popular choices include Tullamore D.E.W. and Jameson, but you can use your favorite Irish whiskey or whatever you have on hand. The whiskey should be smooth and not overpower the coffee.
History: This hot coffee cocktail was introduced to many Americans by travel writer Stanton Delaplane and Jack Koeppler, owner of the Buena Vista Cafe in San Francisco. On November 10, 1952, they worked together to recreate an Irish coffee they had enjoyed at Shannon Airport in Ireland. Early attempts struggled to get the cream to float; the local dairy-owner mayor suggested aging the cream for a couple of days and only lightly whipping it. That technique produced the perfect consistency that would float as a “collar” on top of the coffee.

Ingredients
- Hot water (to warm the glass)
- 6 oz brewed hot coffee
- 1½ oz Irish whiskey (Tullamore D.E.W., Jameson, or your preferred Irish whiskey)
- 2 cane sugar cubes (or 3 teaspoons brown sugar)
- Softly whipped cream, about 1 inch to top the glass
- Dash of cinnamon or nutmeg, optional
Instructions
Warm the glass
- Fill an Irish coffee glass or heatproof mug with hot water and let it sit a minute to warm the glass, then discard the water.
Make the Irish Coffee
- Add the hot brewed coffee and the sugar cubes to the warmed glass. Stir until the sugar is fully dissolved. Using brown sugar gives a richer, caramel-like flavor.
- Add the Irish whiskey and stir gently to combine.
- Lightly whip cream so it is soft but still pourable. To create the classic cream collar, hold a spoon upside down (the back of the spoon facing up) over the coffee and slowly pour the cream over the back of the spoon so it floats on top and forms a distinct layer.
- Optionally, sprinkle a light dash of cinnamon or nutmeg on the cream for a touch of warm spice.
