Grilled Beef Kabobs — Easy, Flavorful Weeknight BBQ
Rain or shine, a craving for barbecue doesn’t wait. These grilled beef kabobs are a simple, satisfying meal that comes together quickly with minimal prep and big flavor. If you prefer poultry, you can use the same method with chicken instead of beef.
For this straightforward kabob recipe you will need skewers and a selection of vegetables. The combination below is a family favorite, but feel free to substitute vegetables you prefer.

Ingredients
- 2 lbs chuck eye steak (or a similar grilling cut), cut into 1½-inch cubes
- 1 green bell pepper, cut into large pieces
- 1 red bell pepper, cut into large pieces
- 1 medium onion, cut into wide wedges
- 1 small zucchini, thickly sliced
- 1 package mushrooms, whole or halved depending on size
- 1/3 to 1/2 bottle Italian dressing (for marinating)
- Wooden skewers (soaked) or metal skewers
Preparation
If you use wooden skewers, soak them in water for at least 30 minutes before assembling to reduce the chance they will burn on the grill. Cut the beef into even, roughly 1½-inch cubes so everything cooks uniformly. Chuck eye is an economical choice with enough marbling to stay moist when grilled in pieces.
Place the cubed beef in a resealable plastic bag or shallow container and pour 1/3 to 1/2 of the bottle of Italian dressing over it. Seal the bag and refrigerate for 30 to 60 minutes. The marinade adds flavor and helps tenderize the meat slightly.
While the beef marinates, wash and cut the vegetables. Aim for pieces about 2 inches square so they stay on the skewer during grilling. Large, uniform chunks also ensure even cooking and a pleasant presentation.
Assembling the Kabobs
Once your beef has marinated and the vegetables are prepped, assemble the kabobs. There is no strict order required — alternating meat and vegetables creates an attractive color contrast. If your family members prefer different combinations, make a few skewers to suit each preference; for example, mushroom-only skewers are a great option for mushroom fans.
Grilling Method
Preheat a gas grill to around 350°F (moderate heat). Before placing the kabobs on the grates, wipe the grill with an oiled paper towel to reduce sticking. Place the kabobs on the preheated grill and cook for approximately 5–7 minutes per side, depending on the size of the meat cubes and the heat of your grill.
Use a meat thermometer to check doneness. For well-done beef, aim for an internal temperature of about 160°F; adjust based on your preferred level of doneness. Once cooked through, remove the kabobs from the grill and tent loosely with aluminum foil. Let them rest for at least 5 minutes so the juices redistribute into the meat.

Serving Suggestions
These beef kabobs are excellent served over a bed of steamed Basmati rice or alongside a fresh green salad. For a complete meal, add a light dessert such as a fruit parfait or seasonal fruit salad. The simple marinade and grilled vegetables make for a balanced plate that’s both colorful and satisfying.
