How To Make Mediterranean Baked Beans

Steps 1-2 of preparing this recipe: cooking the onion in a saucepan and adding in the tomato and seasonings.

1 — Sauté the aromatics:
Preheat an oven to 180°C (355°F). In an ovenproof saucepan set over medium heat, warm the olive oil and cook the chopped onion until soft and translucent, about 8–10 minutes. Add the garlic and cook for a further 1–2 minutes, stirring so it doesn’t burn.

2 — Make the tomato-herb sauce:
Stir in the crushed tomatoes, a splash of water to rinse the can, the chopped rosemary and thyme, dried oregano, salt, pepper and chilli flakes if using. Bring to a gentle simmer and cook for about 10 minutes to concentrate the flavours.

3 — Add the beans and bake:
Stir in the drained and rinsed beans, cover with a lid, and transfer the saucepan to the preheated oven. Bake for 30 minutes, stirring once halfway through. If the sauce becomes too thick, add a little water to maintain a saucy consistency.

4 — Finish and serve:

  • 2 tablespoon extra virgin olive oil
  • 1 medium brown/yellow onion, finely chopped

Instructions

  • Preheat the oven to 180°C (355°F).
  • In an ovenproof saucepan over medium heat, warm the olive oil and sauté the chopped onion for 8–10 minutes until soft. Add the garlic and cook 1–2 minutes more.

  • Bake for 30 minutes. After 15 minutes, stir and check the liquid level, adding a little water if needed. Adjust seasoning when finished.
  • Serve topped with fresh basil, a drizzle of olive oil and crumbled cheese if using. Enjoy with crusty bread, rice or polenta.
