I’m not sure exactly how our Thanksgiving will unfold, but I do know there will be lots of classic dishes. We don’t usually make these recipes outside of the holidays, so we’re excited for turkey, green bean casserole, stuffing, and of course, pumpkin pie. For a twist this year, I’m making Pumpkin Pie in a Jar — single-serve mini pies baked in half-pint mason jars. They’re convenient, cute, and perfect for small gatherings.

Ingredients

  • 1 cup brown sugar
  • 1/4 cup white sugar
  • 3 eggs
  • 1 (15-ounce) can pumpkin puree
  • 1 teaspoon vanilla extract
  • 1 teaspoon pumpkin pie spice
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1 (12-ounce) can evaporated milk
  • 5 half-pint jars
  • Optional topping: 1 tablespoon sugar mixed with 1/2 teaspoon cinnamon
  • Optional topping: whipped cream

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, beat together the eggs, brown sugar, and white sugar until well combined.
  3. Add the pumpkin puree, vanilla, pumpkin pie spice, cinnamon, and salt. Mix until evenly incorporated.
  4. Stir in the evaporated milk until the mixture is smooth.
  5. Pour the filling into the jars, leaving a little space at the top. You may have a small amount of filling left over.
  6. Place the jars in a baking dish and carefully transfer them to the oven. Bake 35–40 minutes, until the centers are set and a toothpick inserted near the center comes out clean.
  7. Allow the jars to cool completely. Refrigerate if not serving the same day. Before serving, top with whipped cream and a sprinkle of cinnamon sugar if desired.
