The hubs and I love thrift stores and garage sales. One of my favorite finds is an old cookbook or a stack of handwritten recipe cards — I enjoy reading the notes and tweaks previous owners left behind. Recently my husband brought home a stack of handwritten recipes and this rib recipe was tucked inside on a plain scrap of paper. I had a rack of ribs in the freezer, tried it, and it quickly became a keeper. These slow cooker BBQ ribs deliver big flavor with minimal hands-on time and are perfect for busy days when you want something comforting and impressive with very little effort.

To deepen the flavor and remove some surface fat, the ribs are briefly roasted at a high temperature before finishing low and slow in the slow cooker. That short sear gives them a nice color and helps the sauce cling better.

After browning, the ribs go into the slow cooker where a simple, savory BBQ sauce—made from ketchup, steak sauce, brown sugar and a few seasonings—coats the meat and slowly melts into it. The result is tender meat that practically falls from the bone and has a balanced, slightly smoky-sweet flavor that isn’t overly sweet or cloying.

Once cooked, you can serve the ribs as-is or brush with a little extra barbecue sauce and finish under the broiler for a couple minutes to add a sticky glaze. I usually find they don’t need extra sauce — the slow-cooked juices and sauce reduce nicely inside the cooker — but a quick glaze is a nice option if you prefer a more caramelized finish.

Ingredients

  • 1 whole rack St. Louis style pork spare ribs
  • Salt and pepper, to taste
  • ½ cup ketchup
  • 3 tablespoons brown sugar
  • ½ cup steak sauce (A-1 or similar)
  • 2 tablespoons apple cider vinegar
  • ½ teaspoon kosher salt
  • ½ teaspoon liquid smoke (optional, for added smoky flavor)
  • 1 tablespoon dehydrated onion

Instructions

  1. Preheat your oven to 450°F (232°C).
  2. Cut the rack into 2–3 bone portions. Place the pieces on a lined baking sheet, season lightly with salt and pepper, and bake for 10 minutes.
  3. Switch the oven to broil and broil the ribs for about 5 minutes on each side until lightly browned and caramelized. Watch carefully so they don’t burn.
  4. Transfer the browned ribs to the slow cooker, arranging them in a single layer if possible.
  5. In a bowl, combine ketchup, brown sugar, steak sauce, apple cider vinegar, kosher salt, liquid smoke (if using), and dehydrated onion. Stir until smooth.
  6. Pour the sauce over the ribs, covering them evenly.
  7. Cover and cook on LOW for 6–8 hours, or until the ribs are very tender and the meat almost falls off the bone. My ribs took about 8 hours for the ideal fall-apart texture.
  8. If desired, remove the ribs from the slow cooker, spoon some cooking liquid into a small saucepan and simmer until slightly thickened, then brush over the ribs. For a sticky finish, place glazed ribs under the broiler for 1–2 minutes, watching closely.

Tips and Serving Suggestions

  • For best results, trim excess fat before roasting to avoid greasy sauce.
  • Adjust the brown sugar to taste if you prefer sweeter or less sweet ribs.
  • Serve with classic sides like coleslaw, baked beans, roasted potatoes, or cornbread for a full barbecue-style meal.
  • Leftover ribs are great chopped into sandwiches or reheated gently in a covered pan with a splash of water or extra sauce to keep them moist.
