Sparkling Non-Alcoholic Ginger Mocktail Recipe

This Ginger Mocktail recipe has been one of my favorites for years, and I’m excited to finally share it here. A honey-infused homemade ginger syrup combined with club soda creates a bright, refreshing beverage that’s perfect for any season. The ginger syrup is easy to make ahead and keeps well in the refrigerator, so you can mix a mocktail in under a minute whenever you want.

I stopped drinking alcohol some time ago and feel much better for it. If you’re participating in Dry January, avoiding alcohol while pregnant, or simply enjoy a well-crafted nonalcoholic drink, this mocktail is a great option. It pairs well with many foods and occasions — from weekday lunches to holiday gatherings — and can be made alcohol-free or turned into a simple cocktail by adding a splash of vodka if desired.

Why I love this recipe

  • Bright, balanced flavor from fresh ginger, lemon, and honey.
  • Extremely versatile — pairs well with many dishes and menus.
  • Quick to prepare once the syrup is made; great for batching.
  • Uses fresh ginger instead of artificial ginger flavor for a true, crisp taste.
  • A festive, nonalcoholic choice for holidays and family gatherings.
  • The ginger syrup stores in the fridge for up to one month, so a refreshing drink is always within reach.

Recipe substitutions and variations

  • Sparkling water swap: Any carbonated water, sparkling mineral water, or soda water will work.
  • Sweetener options: Agave nectar or maple syrup can replace honey, though the flavor will vary slightly.
  • Fruity twist: Add a splash of pineapple, orange, or grapefruit juice for a flavored mocktail.
  • Ginger options: If you prefer, use fresh ginger juice in place of the infused syrup, adjusting sweetness to taste.
  • Garnishes: Fresh mint, rosemary, or a lemon wheel make attractive, aromatic garnishes.

If you try other variations, please share how it turned out in the comments.

Recipe instructions

Ginger, water, honey and lemon in a sauce-pot.

Step 1: Make the ginger simple syrup. Combine sliced fresh ginger, water, honey, and the juice of one lemon in a saucepan. Bring to a boil over medium-high heat, then reduce to a simmer and cook gently for about 20 minutes. This extracts the ginger flavor and lets the honey dissolve into a concentrated syrup.

Step 2: Cool and strain. Remove the pan from the heat and allow the syrup to cool completely. Strain the syrup through a fine-mesh strainer into a bowl or jar to remove ginger pieces. Store the syrup in an airtight container in the refrigerator for up to 30 days.

To assemble the mocktail: Fill a glass with ice, add 1/4 cup ginger simple syrup (adjust to taste), top with 1/2 cup club soda or sparkling water, and stir gently. Garnish with a lemon wheel, fresh mint, or rosemary if you like.

Recipe tips and tricks

  • Cool before mixing: Always allow the syrup to cool completely before using it in drinks to avoid diluting the carbonation and to preserve flavor.
  • Strain well: Straining removes larger pieces of ginger so the syrup is smooth and pours easily.
  • Adjust sweetness: Taste the syrup after simmering and add more honey if you prefer a sweeter drink.
  • Batch prep: Double or triple the syrup recipe to keep on hand for parties or quick daily mocktails.

Recipe FAQs

Can I use dried ginger instead of fresh?

This recipe really shines with fresh ginger. Dried ginger will not provide the same bright, aromatic profile.

How long does the syrup last?

The ginger-honey syrup keeps for up to 30 days in the refrigerator when stored in a sealed container.

Can I add anything else to the syrup?

Yes — a little extra lemon juice or a strip of citrus peel added while simmering can enhance brightness. Remove peels before storing.
