How to make Sunnyside Salad

While the skillet heats, pile salad greens into a bowl and use a vegetable peeler to shave the carrot into ribbons over the greens, if you like the extra texture. Toss the greens lightly so they’re ready for the eggs.

When the skillet is screaming hot, add a generous dollop of ghee. Ghee has a high smoke point and a neutral, buttery flavor that’s perfect for frying eggs.
