Ingredients
You only need three pantry staples for this recipe:

- Coconut flour — a grain-free, high-fibre flour made from dried coconut. It’s very absorbent and has a mild coconut aroma that blends well with other ingredients.
- Smooth peanut butter — creamy peanut butter gives the bites their classic flavour and fudgy texture. Use a stirrable, spreadable peanut butter for best results.
- Maple syrup — a liquid sweetener and binder. Pure maple syrup works well, but other liquid sweeteners can be substituted if needed.
Instructions
Before you begin, make sure your peanut butter is soft and easy to stir. If it’s firm, warm it gently in the microwave for a few seconds or place the jar in a bowl of warm water until it loosens up.
Hint: Warming the peanut butter slightly makes mixing much easier and helps the mixture come together evenly.
Place the coconut flour, peanut butter and maple syrup into a large mixing bowl. Use a fork or spatula to combine, or blend briefly in a food processor until the mixture resembles cookie dough. If the mixture feels too dry, add a little more maple syrup, a teaspoon at a time. If it is too wet, add a small amount of flour.

Substitutions
- Coconut flour can be swapped with oat flour or almond flour if you prefer a different texture or flavour.
- Peanut butter — use any smooth nut or seed butter such as almond, cashew or sunflower seed butter. Crunchy peanut butter will add extra texture.
- Maple syrup can be substituted with agave syrup, golden syrup or honey (if you are not keeping the recipe vegan). Rice syrup or corn syrup are other liquid sweetener options.

Variations
- Add crunch: Fold in a handful of chopped nuts such as walnuts, pecans or cashews after mixing the base ingredients for extra texture.
- Add fruit: Stir in chopped dried fruit like cranberries, apricots, raisins or finely chopped dates to introduce natural sweetness and chew.
- Chocolate finish: Dip the chilled balls in melted chocolate or drizzle chocolate over them for a more indulgent treat.
- Spiced or flavored: Add a pinch of cinnamon, vanilla extract or a little cocoa powder to change the flavour profile without adding steps.

Equipment
No special equipment is required. A large mixing bowl and a spoon or fork are enough. For a smoother, more uniform mixture, a food processor is helpful but optional.
Storage and freezing
Store these peanut butter energy balls in an airtight container in the fridge for up to two weeks. They keep well and are convenient for packed lunches or snack boxes.
For longer storage, freeze the bites in a freezer-safe container or bag for up to three months. Thaw at room temperature for 15–30 minutes or transfer to the fridge to thaw overnight.

Top tip
If the mixture feels dry while you’re preparing it, add another teaspoon or two of maple syrup until it holds together. If it’s too wet, add a little more flour. Small adjustments will help you get the perfect consistency every time.
