I’ve always wanted to make a poke cake and a pumpkin patch dessert, and with fall in full swing it felt like the perfect pairing. This Pumpkin Patch Poke Cake is festive, playful, and simple enough that kids can help assemble it. It’s a great finish to a Thanksgiving meal or a fun fall gathering treat.

Poke cakes are delightful because they’re moist, flavorful, and straightforward to make. Rather than a multi-layered cake, a poke cake uses a single sheet cake with flavored fillings poured into holes—simple, but impressive. For this version I chose chocolate, but you can easily swap in vanilla, red velvet, carrot, or your favorite cake base.

One 9×13-inch sheet cake

Ingredients

Cake:

  • 1 box Devils Food Chocolate Cake Mix plus ingredients required on the box
  • 1 and 1/4 cups sweetened condensed milk
  • 1 cup semisweet chocolate chips

Pumpkin Patch:

  • 1 can store-bought chocolate frosting
  • 2 cups crushed Oreos (about 24 Oreos crushed into fine crumbs)
  • 3/4 cup store-bought white frosting
  • Leaf green gel food coloring or a tube of green decorating icing
  • Pumpkin candies (mellowcreme pumpkins or similar)

Instructions

For the Cake:

  1. Prepare and bake the cake mix in a 9×13-inch pan following package directions. Allow the cake to set briefly so it’s easier to handle, then remove from the oven.
  2. Immediately poke holes all over the top of the warm cake. Use the end of a spatula, a wooden dowel, or the round end of any kitchen utensil. Make holes spaced evenly across the surface.
  3. Let the cake cool to room temperature on a wire rack, then chill in the refrigerator until completely cool.
  4. Combine the chocolate chips and sweetened condensed milk in a microwave-safe bowl. Microwave in 30-second intervals, stirring between each, until melted and smooth. Pour this chocolate mixture evenly over the cake so it seeps into the holes.

For the Pumpkin Patch Decoration:

  1. Spread the chocolate frosting over the top of the cake to create a “mud” layer.
  2. Sprinkle the crushed Oreo crumbs evenly over the frosting to form “dirt.” You want full coverage so the chocolate frosting is hidden beneath the crumbs.
  3. Tint the white frosting with leaf green gel food coloring until you reach your desired shade. If you prefer, use a pre-colored green decorating icing to skip tinting.
  4. Transfer green frosting to a disposable piping bag and snip off a small tip. Pipe loose swirls across the Oreo crumbs to resemble pumpkin vines. Add small triangle or teardrop shapes along the vines to represent leaves.
  5. Arrange pumpkin candies on top of the vines to complete the pumpkin patch. Slice and serve.

Notes

– If you prefer less fuss, use a tube of ready-made green decorating icing for the vines and leaves instead of tinting white frosting. It’s quick and works well for kids to decorate.

Tips: Letting the cake chill after pouring the chocolate mixture helps the filling set and keeps slices tidy. For finer “dirt,” pulse the Oreos in a food processor or place them in a sealed bag and crush with a rolling pin until you have fine crumbs.
