Ingredients

  • 1/2 cup sugar
  • 2 Tbsp butter
  • 1 Tbsp vegetable oil
  • 2 Tbsp water
  • 1 1/2 cups semi-sweet chocolate chips
  • 2 eggs
  • 1 tsp vanilla extract
  • 2/3 cup all-purpose flour
  • 1/4 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup chopped pecans (optional)

Instructions

  1. Preheat the oven to 325°F (165°C). Spray an 8-inch square baking pan with nonstick spray or line it with parchment paper and set aside.
  2. In a large saucepan over medium heat, combine the sugar, butter, vegetable oil, and water. Bring the mixture to a boil, stirring occasionally so the sugar dissolves and the butter melts.
  3. Remove the pan from the heat and add the semi-sweet chocolate chips. Stir until the chocolate is fully melted and the mixture is smooth. Allow the chocolate mixture to cool slightly so it is warm, not hot.
  4. Whisk in the eggs and vanilla until the batter is glossy and uniform. If the chocolate is too hot when you add the eggs, they may scramble, so make sure it has cooled a bit.
  5. Gently fold in the flour, baking soda, and salt until just combined. Stir in chopped pecans if using.

Notes

Make sure the chocolate mixture has cooled somewhat before adding the eggs — if it’s too hot you’ll end up with scrambled eggs in the batter. For the best crackly top, stir the batter vigorously for a short time after adding the eggs to incorporate air and create the glossy sheen. These brownies are delicious warm with a scoop of vanilla ice cream or at room temperature. Store in an airtight container for up to three days; refrigeration will firm them further.
