Ingredients

  • 3/4 cup pecans
  • 5 whole pitted dates
  • 1/2 cup maple syrup
  • 1 teaspoon vanilla
  • 1/4 teaspoon sea salt or kosher salt
  • 1 can (9 ounce) coconut cream
  • 1 cup canned coconut milk
  • 1/3 cup mini chocolate chips (use dairy-free if needed)
  • 1/3 cup toasted pecans, cooled and coarsely chopped

Instructions

  1. In a high-speed blender or food processor, process 3/4 cup pecans, the dates, and the maple syrup until the mixture is smooth. In a Vita-Mix this takes about 30 seconds on high; in a food processor pulse and scrape the sides until smooth.
  2. Add vanilla, salt, and coconut cream and continue processing until smooth, about 30 more seconds. If using a food processor, you may want to transfer to a blender before adding significant liquid. Add the canned coconut milk and blend quickly until fully combined.
  3. Pour the mixture into a frozen and ready ice cream maker and churn according to the manufacturer’s instructions (about 20 minutes for many machines). Add 1/3 cup mini chocolate chips and 1/3 cup toasted pecans in the last minute of churning.
  4. Transfer the churned ice cream to a freezer-safe container, cover, and freeze. Straight from the machine it will be soft-serve texture; freeze a few hours or overnight for a firmer scoopable texture.
