Yield: Serves 4

Prep Time: 15 minutes

Cook Time: 30 minutes

Ingredients:

  • For the salad:
  • 1 large head of cauliflower, cut into small florets
  • 1 can (14 oz) chickpeas, drained and rinsed
  • 3 tbsp olive oil
  • 1 tbsp chili powder
  • 2 tsp smoked paprika
  • 1/2 tsp red pepper flakes (optional)
  • Salt and freshly ground black pepper, to taste
  • 5 cups mixed greens
  • Small cucumbers, sliced, for garnish
  • Grape tomatoes, halved, for garnish
  • Feta crumbles, for garnish (optional)
  • For the dressing:
  • 1/4 cup olive oil
  • 2 tsp red wine vinegar
  • 1 tsp granulated sugar
  • 1 tsp honey
  • 1 tsp Dijon mustard
  • Salt and pepper, to taste

Directions:

  1. For the salad:
  2. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly oil it.
  3. In a large bowl, combine the cauliflower florets and drained chickpeas. Drizzle with 3 tablespoons olive oil, then sprinkle the chili powder, smoked paprika, red pepper flakes (if using), salt, and pepper. Toss until everything is evenly coated.
  4. Spread the cauliflower and chickpeas in a single layer on the prepared baking sheet. Roast for about 20–25 minutes, or until the cauliflower is tender and edges are golden and slightly crisp. Stir once halfway through for even roasting.
  5. Place the mixed greens in a large serving bowl. When the roasted vegetables are done, transfer them to the bowl with the greens. Add sliced cucumbers, halved grape tomatoes, and feta crumbles if using. Drizzle with the dressing and toss gently to combine.
  6. For the dressing:
  7. In a small bowl or jar, whisk together 1/4 cup olive oil, red wine vinegar, sugar, honey, Dijon mustard, and a pinch of salt and pepper. Taste and adjust seasoning or sweetness as desired.
  8. Serve the salad warm, at room temperature, or chilled. Leftovers keep well in the refrigerator for up to 3 days—store dressing separately if possible to maintain crisp greens.
