Loaded with eggs, black beans, sautéed peppers and onions, and crispy potato puffs, these easy Southwestern Breakfast Bowls are a flavorful, gluten-free choice for a healthy weekend morning.

I’ve been on a mission to recreate restaurant-style breakfasts at home — from waffles to savory breakfast bowls — because a special morning meal makes the day feel brighter. That said, simplicity wins some mornings, so I balance elaborate breakfasts with quick options when I need them. These Southwestern Breakfast Bowls are the kind of recipe that feels elevated but is still straightforward enough for a relaxed weekend at home.

This recipe layers bold flavors and contrasting textures: seasoned black beans for warmth and protein, sautéed bell peppers and onions for sweetness and char, crispy Four Potato Puffs for crunch, and runny fried eggs to tie everything together. A quick spicy aioli brings a creamy, tangy finish, and optional salsa, cilantro, jalapeño, and tortilla chips add brightness and an extra crunch. The result is an easy, satisfying breakfast that’s naturally gluten-free and easy to adapt.
These bowls are also highly flexible. Use your favorite frozen potato puffs or hash browns if you prefer, swap in canned pinto beans for black beans, or fold in avocado for creaminess. The aioli can be made milder or hotter depending on your taste. The recipe scales well for two or more people and comes together in about 30 minutes, making it perfect for weekend brunches or a special weekday treat.

Description
These Southwestern Breakfast Bowls combine simple pantry staples into a colorful, balanced breakfast. Black beans seasoned with chili powder and cumin provide depth and protein; sautéed red pepper and onion add sweetness and texture; crispy potato puffs bring a satisfying crunch; and fried eggs finish each bowl with richness. A quick sriracha-Dijon aioli ties everything together for a bright, slightly spicy finish. Serve with salsa, cilantro, jalapeño slices, and tortilla chips if desired.
Ingredients
For the bowls:
- 1 (15 oz) can black beans, drained and rinsed
- 1 tsp chili powder
- ½ tsp cumin
- ½ tsp oregano
- ¼ tsp salt
- ¼ tsp garlic powder
- Salt and pepper, to taste
- 1 tbsp extra virgin olive oil
- 1 red bell pepper, sliced
- ½ medium onion, thinly sliced
- 1 package Dr. Praeger’s Four Potato Puffs (or preferred potato puffs)
- 2 eggs
- Salsa, cilantro, sliced jalapeño, and tortilla chips for topping (optional)
For the aioli:
- ¼ cup mayo (regular or vegan)
- 1 tsp sriracha
- 1 tsp Dijon mustard
- 1 tsp honey or maple syrup
Instructions
- Preheat the oven and cook the Four Potato Puffs according to the package directions until golden and crispy.
- While the potato puffs bake, warm a small pot or saucepan over medium heat. Add the drained black beans, then stir in the chili powder, cumin, oregano, salt, and garlic powder. Heat until warmed through, adjusting seasoning with salt and pepper to taste.
- In a medium skillet, heat the olive oil over medium heat. Add the sliced red bell pepper and thinly sliced onion. Sauté for about 6–8 minutes, stirring occasionally, until the vegetables are softened and have some browned edges.
- Make the aioli in a small bowl by stirring together the mayo, sriracha, Dijon mustard, and honey (or maple syrup). Taste and adjust the balance of heat and sweetness as needed.
- After the vegetables are done, wipe the skillet clean, add a splash of oil if needed, and cook the eggs to your preference—fried with runny yolks works especially well for these bowls.
- To assemble, divide the warmed black beans between two bowls. Top with the sautéed peppers and onions, add the cooked potato puffs, and place the eggs on top. Drizzle with the spicy aioli and garnish with fresh cilantro, salsa, sliced jalapeño, and tortilla chips for crunch if desired.
