  • 7 large apples, peeled & diced (about 11 cups diced, 1130 g)
  • 1/4 cup salted butter (56 g)
  • 1/2 cup light brown sugar, packed (110 g)
  • 1 tbsp lemon juice
  • 2 1/2 tsp cinnamon (6 g)
  • 1 tsp nutmeg (3 g)
  • 1/2 tsp ground cloves
  • 1/4 tsp allspice
  • Pinch of salt
  • 1/2 tsp vanilla extract
  • 2 tsp cornstarch
  • 2 tsp water

For the Cinnamon Roll Dough

  • 1/2 cup salted butter, melted and 115°F (113 g)
  • 1 cup warm milk, 115°F (240 mL)
  • 2 large eggs, lightly beaten, room temperature
  • 1/3 cup granulated sugar (70 g)
  • 2 1/2 tsp instant yeast (9 g)
  • 3/4 tsp salt
  • 4 cups + 1 tbsp all-purpose flour, spooned & leveled (528 g)

For the Crisp Topping

  • 1/4 cup all-purpose flour (33 g)
  • 1/2 cup old-fashioned rolled oats (52 g)
  • 1/4 cup light brown sugar, packed (55 g)
  • 1/8 tsp salt
  • 1/2 tsp cinnamon
  • 1/4 cup cold salted butter (56 g)

For the Caramel Apple Cider Sauce

  • 1/2 cup salted butter, very softened (113 g)
  • 3/4 cup dark brown sugar, packed (165 g)
  • 2 tsp cinnamon
  • Pinch of salt
  • 2 tbsp boiled apple cider (concentrate) (36 g)
  • 1 tsp vanilla extract
  • 2 tbsp heavy cream (30 g)

For the Cinnamon Filling

  • 1/2 cup salted butter, softened (113 g)
  • 3/4 cup light brown sugar, packed (165 g)
  • 2 tbsp cinnamon
  • 1/4 tsp nutmeg
  • Pinch of salt
  • 1/2 tsp vanilla extract
  • 1/3 cup heavy cream (for pouring over the rolls, warmed slightly) (80 g)

For the Frosting

  • 6 ounces cream cheese, softened (170 g)
  • 1 cup powdered sugar (115 g)
  • 1 tsp vanilla extract
  • Pinch of salt
  • 1/8 tsp cinnamon (optional to taste)
  • 2–3 tbsp milk or heavy cream to thin

Instructions

  • Make the apple filling & topping: Add the apples, butter, brown sugar, lemon juice, spices, salt, and vanilla to a medium pan over medium-high heat. Cook 8–10 minutes, stirring, until the apples are tender and juices are slightly reduced. If the mixture needs thickening, whisk 2 tsp cornstarch with 2 tsp water and stir into the filling; cook 30–60 seconds until thickened. (Make-ahead: store refrigerated up to 3 days.)
  • Make the dough & first rise: In a mixer bowl, combine melted butter, warm milk, beaten eggs, sugar, yeast, and salt. Mix in the flour until incorporated and let rest 5 minutes. Knead with a dough hook 5–7 minutes on low until smooth and elastic. Place dough in a lightly greased bowl, cover, and let rise about 1 hour until doubled and an indent holds.
  • Make the crisp topping: Preheat oven to 350°F. Mix flour, oats, brown sugar, salt, and cinnamon. Cut in cold butter until crumbly. Spread on a sheet pan and bake 12–16 minutes, stirring halfway, until golden. Cool.
  • Make the caramel apple cider sauce: Beat together softened butter, brown sugar, cinnamon, salt, boiled apple cider concentrate, vanilla, and heavy cream. Spread evenly in the bottom of a greased 9×13 pan.
  • Make the cinnamon filling: Beat butter, brown sugar, cinnamon, nutmeg, salt, and vanilla until creamy and combined. Set aside.
  • Assemble the rolls: Roll the dough into a 14×22 (or up to 15×24) rectangle. Spread the cinnamon filling evenly, then dot 1 1/2 cups of apple filling over the cinnamon filling. Slice strips about 1 3/4 inches wide and roll each strip individually. Place rolls seam-side down in the pan on top of the caramel sauce. Cover and let rise 30–40 minutes until puffy.
  • Bake: Pour room-temperature heavy cream over and between the rolls. Bake 40–46 minutes at 350°F until golden and set; an instant-read thermometer in the center roll should read 205–210°F. Prepare frosting while the rolls bake.
  • Make the frosting: Beat cream cheese, butter, powdered sugar, vanilla, cinnamon, and salt until smooth. Thin with milk or cream if desired. Spread over warm rolls, then top with extra apple filling and the crisp topping. Serve immediately.
