Ingredients

  • 4 large potatoes (around 1.5kg)
  • 2 litres chicken stock (good quality)
  • 160 g sour cream
  • 1 tbsp mayonnaise
  • 1 clove garlic, crushed
  • 2 baby gherkins, finely chopped
  • 1 tsp capers, finely chopped
  • 1/2 tbsp dried oregano
  • 1 white onion, finely chopped
  • 77 g smoked pancetta (one packet) or smoked bacon, diced
  • Sunflower oil (or other neutral oil), for frying
  • Salt and freshly ground black pepper, to season

Instructions

  1. Bring the chicken stock to a boil in a large pot. Peel the potatoes and add them whole to the simmering stock. Cook for about 25 minutes, or until a knife slides in easily but the potatoes are still just holding together—parboiled, not fully cooked.
  2. While the potatoes cook, heat a large frying pan over medium-low heat and add the pancetta. Fry for 1–2 minutes until it starts to render and become fragrant. Add the chopped white onion (and a splash of oil if needed) and continue cooking until the onion is soft and lightly golden. Transfer the pancetta and onion to a plate to keep warm.
  3. Drain the potatoes and allow them to cool slightly so they’re easier to slice. Slice the potatoes into roughly even rounds; halve any very large slices so they fry evenly.
  4. Increase the pan heat to medium-high and add 3–4 tablespoons of sunflower oil. When the oil is hot, add the potato slices in a single layer (work in batches if necessary). Fry, undisturbed at first, until the undersides form a golden, crispy crust. Turn and fry the other side until crisp and cooked through. Season with salt as they cook.
  5. When the potatoes are nearly done, return the pancetta and onions to the pan and toss gently to combine. Turn off the heat and keep warm while you make the sauce.
  6. For the garlic-and-herb sauce, mix the sour cream and mayonnaise in a bowl. Finely chop the gherkins and capers and stir them in. Add the crushed garlic, oregano, and a pinch of salt and pepper. Taste and adjust seasoning as desired.
  7. Serve the Bratkartoffeln hot with dollops of the garlic-and-herb sour cream sauce alongside. They’re excellent as a side for mustard pork steaks, sausages, roasted meats, or simply enjoyed on their own with a warm beverage.
