Keto Cream Cheese Muffins AKA Magic Muffins!

These muffins first appeared on my blog back in 2015 as part of a Day 2 Egg Fast menu plan. Over the years I’ve returned to this simple base and adapted it countless times. It’s a reliable, quick recipe that morphs easily into whatever flavor profile you want — cheesy, herby, fruity, or meaty.

How do you make these Magic Cream Cheese Muffins?

The basic formula requires only three pantry staples:

  • Eggs
  • Cream cheese
  • Butter

That’s it. These three ingredients create a custard-like batter that bakes into tender, slightly dense muffins. From that starting point you can fold in sweet or savory additions to suit your taste and dietary needs.

For example, fold in 1 cup of fresh berries and a little low-carb sweetener for a summertime berry muffin. For savory versions, add cooked bacon and cheddar or shredded cooked sausage and mozzarella. Keep the batter simple and room-temperature ingredients make a smoother batter and more even bake.

Because the base is neutral, you can create many different variations:

The ever-versatile keto cream cheese muffins are a staple for low-carb kitchens. They can be made sweet or savory and are quick to prepare. Kids and adults alike enjoy the many variations.

Ingredients

  • 4 eggs
  • 8 oz cream cheese (1 brick) — or 1/2 cup mayonnaise + 1 extra egg for dairy-free
  • 4 tbsp butter, melted
  • Leave ingredients out for about 2 hours to come to room temperature for best results

Instructions

  1. Place softened butter and cream cheese in a bowl and beat until smooth using an electric mixer or whisk.
  2. Blend in the eggs until fully incorporated and the batter is smooth.
  3. Fold in any mix-ins: berries and sweetener for a sweet muffin, or cooked meats, cheeses, and herbs for savory muffins.
  4. Divide the batter evenly into 12 muffin cavities.
  5. Bake at 325°F (160°C) for about 20–25 minutes, or until a toothpick inserted comes out clean.
  6. Allow muffins to cool before serving.

Notes

Sweet Muffins:

  • Fold in 1 cup fresh berries and a low-carb sweetener to taste.
  • Add a tablespoon or two of flavored keto syrup or a pinch of cinnamon and pumpkin pie spice for variation.

Savory Muffins:

  • Add cooked proteins and additional cheeses: bacon + cheddar, ham + Swiss, or shredded beef + provolone.
  • Stir in chopped vegetables (peppers, zucchini, tomatoes) and herbs for extra flavor.
  • Season with Italian seasoning, garlic powder, or fresh herbs as desired.

Storage and reheating

Store muffins in an airtight container in the refrigerator for up to 4–5 days. Reheat gently in the oven or microwave until warmed through. They also freeze well — wrap individually and freeze for up to 2 months.
