  • Beat the cream cheese about 4–5 minutes at medium speed until completely smooth.
  • Bake at the recommended temperature and time, then let the cheesecakes cool for about 20 minutes before adding preserves and whipped cream.
  • Use a small glass or the back of a spoon to press the graham cracker crumbs evenly into the liners.
  • Fill each liner roughly 3/4 full — about 6 tablespoons of batter per muffin cup is ideal.

  • 1 1/2 Tbsp all-purpose flour

  • 1/4 cup heavy cream

  • 1 cup heavy whipping cream
  • 1/4 cup granulated sugar

Instructions

For the crust

  1. Preheat the oven to 350°F (175°C).
  2. Place graham crackers in a food processor and pulse until finely crushed. If you don’t have a processor, put crackers in a sealed bag and crush them with a rolling pin.
  3. Stir in the melted butter and 1 1/2 tablespoons sugar until the crumbs are evenly coated.
  4. Divide the crumb mixture among twelve standard muffin liners, pressing each into the bottom to form a compact crust. Start with about 1 tablespoon per liner and press firmly.
  5. Bake the crusts for about 10 minutes, or until the edges are lightly toasted. Remove and let cool while you prepare the batter.

Prepare the cheesecake batter

  1. Reduce oven temperature to 325°F (163°C).
  2. Beat the room-temperature cream cheese with a hand mixer until smooth and free of lumps.
  3. Add 3/4 cup sugar and 1 1/2 tablespoons flour; beat until fully incorporated.
  4. Add eggs one at a time, mixing after each addition. Stir in vanilla, sour cream and heavy cream until smooth.
  5. Spoon the batter into the prepared crusts. Start with 2 tablespoons in each cup, then distribute the remaining batter so each liner is about 3/4 full (approximately 6 tablespoons each).
  6. Bake at 325°F for about 18–20 minutes, until the centers are just set but still slightly jiggly. Watch your oven and adjust timing as needed to avoid overbaking.
  7. Remove from the oven and let cool to room temperature, then chill in the refrigerator for at least an hour before decorating.
  8. Top each cheesecake with 1 tablespoon strawberry preserves, pipe or spoon on whipped cream, and finish with a fresh strawberry slice.

Homemade whipped cream

  1. Chill a mixing bowl and beaters, then pour in 1 cup heavy whipping cream.
  2. Beat until frothy, add the 1/4 cup sugar in three additions, and continue beating until stiff peaks form.
