- 4 boneless skinless chicken breasts (about 1 pound)
- Salt and freshly ground black pepper, to taste
- 1/2 cup goat cheese
- 4 slices bacon, cooked crisp and crumbled
- 1 package (about 1.5 ounces) California raisins
- 1/4 cup chopped walnuts
- 1/4 cup unflavored bread crumbs
- 2 sprigs fresh thyme, leaves only
- 1 egg
- 2 tablespoons olive oil
Instructions
- Preheat the oven to 325°F (160°C). Grease a 9×13-inch baking dish lightly with cooking spray or a small amount of oil and set aside.
- Season the chicken breasts with salt and pepper. Use a sharp knife to cut a pocket into the side of each breast, deep enough to hold the stuffing. Be careful not to cut all the way through.
- In a mixing bowl, combine the goat cheese, crumbled bacon, raisins, chopped walnuts, bread crumbs, thyme leaves and the egg. Mix until evenly combined and the mixture holds together.
